What makes true cinnamon
Most “cinnamon” on grocery shelves is cassia — bold, peppery and hard-barked. True Ceylon cinnamon is a different spice experience: lighter, sweeter and more complex, with floral and citrus notes. Ours is sourced exclusively from Sri Lanka’s southwestern lowlands (the Galle and Matara regions), USDA-certified organic, and ground fresh in small batches.

Cassia (most supermarket cinnamon) is bold, peppery and intense. Ceylon — “true cinnamon” — is lighter, sweeter and more complex, with floral and citrus notes, and its bark forms thin, papery layers instead of one hard shell.
